Området omkring Højby har været beboet siden oldtiden og der er fundet flere fund i området. Selve Højby er anlagt omkring 1100 af stormanden Ebbe Skjalmsen fra den magtfulde Hvideslægt der bl. andet tæller Ærkebisp Absalon. The area around Højby has been inhabited since ancient times and is rich in archaeological finds. Højby was founded around 1100 by the big landlord Ebbe Skjamsen of the powerful Hvide family which also includes the archbishop Absalon.
